Services
Bridget B's was formed in 2005 as a diversification for our farming business. Run by Bridget and her partner James the early days saw us learning the craft of butchery and cutting our teeth at Farmers markets across the region as well as opening our own Butchers shop in 2007 on the home farm in East Hertfordshire.
Our Farmhouse Sausages are made from twice minced Pork Shoulder meat and mixed with breadcrumbs and our special recipe of herbs and spices with both White and Black Pepper added for a deeper flavour. Sausages are an easy 'go to' versatile mid week meal, be it Bangers and mash, Sausage Sandwich for lunch, Toad in the hole or a sausage casserole.
Our rump steak is incredibly succulent, dense and packed with flavour. Its great for frying, grilling or barbecuing Rump is cut from the hind quarter, with a thin strip of fat for flavouring. Heat some oil in a pan or griddle, Rump can be cooked at a higher temperature as it is a denser cut allowing the rind to crisp (stand the steak to sear the rind).
Our Extra Lean Braising Steak is excellent value for money and is similar to stewing beef, although slightly more tender. It tastes great when slow cooked making the beef melt in your mouth and provides intense flavour. Pre heat your oven to 135 degrees. Season the meat just prior to coloring with good quality sea salt.
The Top Rib is a boneless joint of beef from the shoulder that makes a good roasting joint full of flavour. A lean cut and should be roasted gently to get the best taste. Add a little beef stock and wine when you are deglazing the tray, followed by a blob of butter to make the most gorgeous gravy. As with every joint, leave it resting once cooked to allow all the wonderful juices to run back into the joint, giving the meat irresistible flavour.

Absolutely amazing service from Bridget! I ordered last minute (thanks to covid and tier 4 meaning our plans changed and I had no turkey!). No problem for Bridget and the team. Our turkey crown was AMAZING. One of the best turkey dinners we have ever had. LOVE the new shop at Pearce’s and regularly get our meats from there now. The venison sausages are delicious!
