I decided for Christmas dinner this year to cook a Heston Recipe of Slow Roasted Rib of Beef with a grass fed beef marrow bone sauce.
The key first step was to source the best cut of meat within my budget. So I relied on my trusted butcher Bobs Butchers in Hatfield and ordered a beautifully marbled aged 2 rib of beef to feed five adults and one toddler.
I took the joint out of the fridge one hour prior to cooking to bring to room temperature. Then seasoned and seared it on all sides in a very hot pan. I preheated the oven to 60C and roasted it for around four hours until the temperature in the

Everything is Lovely from this Family Butchers. I have just had the Beef & Horseradish pie with some Roast Potatoes,Veg and Yorkshire puds. It was absolutely lovely,The Beef was lovely and soft not to chewy or… hard and it was very generously filled with beef. I would highly recommend the pies. I have tried the lamb & Mint and beef & Horseradish both the best pies I have every tasted. Everything from a pork chop to superb Canadian, Aussie or USDA whole packer brisket, St Louis ribs, and dozens of top notch rubs and sauces!
