For example in spring & summer I enjoy incorporating edible flowers such as lavendar, elderflower and rose, as well as making the most of the jewel like luscious summer berries to create not only beautiful, but delicious cakes and flavours that are simply not available on the highstreet. In autumn and winter, summer berries give way to hedgerow beauties such as blackberries and rosehips, and cakes are flavoured with pumpkins and spiced apples.

As with anything in life - you get what you pay for. Where possible I use organic or fairtrade products, and use only local free-range eggs, happy hens make for much tastier cakes, don't you know!
